Delicious Blackberry-Blueberry Muffins

I had some extra blackberries that I needed to use up so I searched the internet for a good muffin recipe, because well, I love muffins!

I came across this blackberry recipe at Simply Recipes, they seemed easy enough to make and looked yummy. I decided to make them, however I adapted the recipe slightly.

Blackberry-Blueberry Muffins

1 1/4 cup all purpose flour
1 1/4 cup whole wheat flour
1 Tbsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
2 large eggs
1 cup plain greek yogurt
1 tsp milk
1 cup sugar
1 tsp vanilla
1 stick of melted butter
1 cup blackberries (if frozen, thaw & drain excess liquid)
1/2 cup blueberries

1. Preheat oven to 400. Grease or line muffin tin with baking cups.
2. Mix together both flours, baking powder, baking soda, cinnamon and salt in a large bowl.
3. In a separate bowl, whisk together eggs, greek yogurt, milk, sugar, vanilla and melted butter.
4. Add the wet ingredients to the dry ingredients and mix together just until mixture is moistened. Add the berries. Do not over mix! The batter should be slightly lumpy.
5. Divide the batter evenly among the baking cups. Bake until slightly golden, and a toothpick inserted into   the middle comes out clean, 17-20 minutes. Let cool before removing from the pan.

These muffins tasted delicious; good for breakfast, a snack or even dessert served with warm vanilla ice cream!

Enjoy!
