I don't know about you, but as summer draws to an end I am counting down the days to cooler weather, oversized sweaters, warm cocoa and delicious pumpkin treats! Today I am sharing the best recipe for the season ahead. I love just about anything pumpkin and these muffins are no exception. They are so delicious I had a hard time sharing.

These will definitely become a new fall favorite recipe, super moist, full of flavor and literally the best pumpkin muffins I have ever had. Pair with a cup of your favorite coffee and breakfast is served. Enjoy!

Pumpkin Streusel Muffins
I have found so many recipes online for this type of muffin, this is my adapted version of several I have found and it is perfection!
Ingredients
  • 2 Cups Whole Wheat Flour
  • 1 Cup Brown Sugar
  • 1 tsp Baking Soda
  • 1 tsp Baking Powder
  • 1 tsp Pumpkin Spice
  • 1/2 tsp Ground Cinnamon
  • 1/2 tsp Salt
  • 1 Stick (1/2 cup) Melted Butter
  • 2 tsp Vanilla
  • 1 (15 oz) can Pumpkin Puree
  • 2 Eggs
Instructions
Preheat the oven to 350. Prepare muffin tin with baking cups or cooking spray. In separate bowl combine flour, sugar, baking soda, baking powder, pumpkin spice, cinnamon and salt. Set aside. Using mixer combine melted butter, vanilla, pumpkin and eggs, mix until combined. Fill baking cups and make streusel topping.Streusel Topping: 3 Tbsp butter at room temperature 1/4 brown sugar 1/4 whole wheat flour 1 tsp pumpkin spice 1 tsp ground cinnamonUsing your fingers (they work best, trust me) mix ingredients together until evenly combined. You want the mixture to be crumbly. Sprinkle crumbs evenly over muffins.Bake for 18-20 minutes or until a toothpick inserted in the middle comes out clean. Once done, cool completely and drizzle with glaze if desired. Cinnamon Glaze: 1 Tbsp melted butter 1 cup confectioners sugar 1-2 Tbsp milk pinch of ground cinnamon Whisk ingredients together until smooth, adding a little milk as you combine until desired consistency. Then drizzle with a fork over the each muffin. Enjoy!

  2. As a lover of all things pumpkin spice these sound amazing!! I made a box mix {don't judge} just last night and they were pretty good. I can't imagine how much better these would be! Thank you for sharing. This hop has been amazing!!
